nnnnSe não concorda, é porque o seu paladar está habituado a comida altamente concentrada em açúcar e sal.
nnnnHá ciência por detrás da culinária. Ao cozinhar um certo alimento, é comum acontecer a reação de Maillard, processo químico que advém da combinação de açúcares, aminoácidos e calor. É este processo que dá mais sabor à comida – sendo o motivo porque a comida fica mais saborosa quando a refogamos.
nnnnPara que tal aconteça, além dos nutrientes certos é necessário que a humidade diminua. Por exemplo, uma batata crua tem 80% de humidade, para que fique cozida (e saborosa), é preciso que esta humidade baixe para os 5%.
nnnnPelo contrário, no microondas não se consegue que a humidade diminua, por isso a reação de Maillard nunca acontece, já que em vez de aquecer o ambiente, o microondas lança ondas de rádio de alta potência que aquecem o alimento. É por isso que a comida confecionada neste aparelho nunca fica tão saborosa quanto a ‘verdadeira’.
nnnnPara contrariar esta falta de sabor, fabricantes de comida pré feita enchem o produto com açúcares e sais, na intenção de dar mais sabor ao prato, o que o muito pouco saudável. Outro aspeto que faz deste tipo de comida um prato desaconselhado é a quantidade de conservantes com que contam: não é suposto uma comida – frequentemente dita como saudável – durar dois ou três meses sem se estragar.
